It won the award due to its commitment to engaging the local comunity and the steps it takes to reduce the detrimental environmental impact it causes.
This is an example of Environmental Citizenship as this is a way of making a business more sustainable, and promoting a greener way of life to the local community. The specific initiatives of using local wood waste to fuel the stoves and making waiters' pads out of old menus are highlighted as great examples of being more sustainable.
