Background - Serve locally sourced vegetarian food within Brighton. All food is grown sustainably and ethically. They also have a food waste management scheme in place to reduce the amount of waste the restaurant creates and increase the amount of recycling within the restaurant.

Aims- To create foo that is not only produced locally but create very little waste to help the restaurant businesses become more sustainable.
